Step 1

Preparing the Chocolate and Egg Yolks :

  • Melt dark chocolate with butter in a double boiler or over low heat. Remove from heat and let cool slightly to avoid cooking the egg yolks.

  • Lightly beat the yolks, then stir them gently into the melted chocolate using a spatula or wooden spoon until combined.

Step 2

Whisking and Combining Egg Whites :

  • Beat egg whites with a pinch of salt until stiff peaks form. Add sugar at the last minute and whisk briefly to combine.

  • Add 1/3 of the egg whites to the chocolate mixture, mixing briskly to aerate. Gently fold in the rest, lifting and turning the mixture with a spatula to preserve the fluffiness.

  • Pour the mousse into small jars or bowls, cover to avoid absorbing fridge odors, and refrigerate for at least 3 hours. Serve as is, or with coffee, Cognac, or a light garnish like whipped cream or a dry cookie.
