Step 1
Preparing the Chocolate and Egg Yolks :
Melt dark chocolate with butter in a double boiler or over low heat. Remove from heat and let cool slightly to avoid cooking the egg yolks.
Lightly beat the yolks, then stir them gently into the melted chocolate using a spatula or wooden spoon until combined.
Beat egg whites with a pinch of salt until stiff peaks form. Add sugar at the last minute and whisk briefly to combine.
Add 1/3 of the egg whites to the chocolate mixture, mixing briskly to aerate. Gently fold in the rest, lifting and turning the mixture with a spatula to preserve the fluffiness.
Pour the mousse into small jars or bowls, cover to avoid absorbing fridge odors, and refrigerate for at least 3 hours. Serve as is, or with coffee, Cognac, or a light garnish like whipped cream or a dry cookie.
