Step 1

Bake the cookies :

  • Mix flour, yeast, sugar, and almond powder. Beat the whole egg and yolk, then add them to the mixture along with softened or melted butter. Add optional flavoring and knead into a ball.

  • Roll out the dough on a floured surface and cut with cookie cutters or glasses. Place cookies on a parchment-lined baking sheet.

  • Brush cookies with egg yolk (optional: mix with cinnamon) for a golden finish.

  • Bake at 200°C (395°F) for 7–10 minutes or until golden brown.

Step 2

The icing to make the decorations on your Christmas cookies :

  • Mix 250 g (2 1/2 cups) powdered sugar with 1 egg white, a few drops of lemon juice, and optional food coloring.

  • Use a piping bag to decorate and add coconut chips or sugar stars if desired.
