The croque-monsieur is a French sandwich dish that we eat in bistro, café or traditional French restaurants, with most of the time some French fries or salad.

Step 1
Prepare the Sandwiches :
Butter one side of 8 slices of soft bread. Spread mustard (or tomato paste for a milder option) on the other side.
Place a slice of cheese on the mustard side of each slice. Add a slice of ham to 4 of the slices.
In a saucepan, melt butter, stir in flour, and cook for 30 seconds over low heat. Gradually add milk, stirring until thickened. Season with pepper and nutmeg (or truffle salt for a gourmet touch). Mix 30g of grated Comté cheese into the béchamel.
Spread béchamel on the buttered side of 4 slices of bread. Assemble sandwiches by layering ham, cheese, and another slice of bread with béchamel.
Top with grated Comté cheese and bake at 420°F (220°C) for 10 minutes. Grill for an additional 2 minutes.
Serve hot with a green salad for a classic pairing.
